Canelés (Cannelés) De Bordeaux - this is the full name of these beauties. Its romantic sound is not deceiving - this is another classic dessert that comes from the region of Bordeaux, France, surrounded by romantic stories.
And indeed cinnamon has something so... cozy, sweet, romantic. Like a confession of love, whispered in the ear quieter than the wind, a gentle touch of the hand, or that feeling when you are firmly standing on the ground, but you don't feel the ground at all in your heart. Cannels are like that - like love. Capricious, difficult to understand, mysterious, but when you get closer, when you polish the corners - incredibly simple, but still magical.
Cinnamon is exceptional. Their shape, texture and taste are unique. The cakes are dark golden on the outside, their surface is caramelized, firm and crispy. Inside - quite the opposite - the cinnamon is light, soft, moist, creamy in texture and richly honeycombed.
